From the Chef: Brown Sugar Cinnamon Carrots

If you’re like us, you’re in the weeds planning Thanksgiving dinner. Here’s a unique & simple side dish recipe for turkey day!

 

Brown Sugar Cinnamon Carrots

Prep Time: 10 minutes

Cook Time: 30 minutes

Feeds: 15


Ingredients:

3 lbs            Baby Peeled Carrot

3/4 cup       Butter

24 oz           Brown Sugar

2 tbsp          Dried Ginger

4 tbsp          Cinnamon


Instructions:

Bring 96 oz of salted water to boil. Place carrots in pot and boil for 15 minutes checking that carrots are al dente. Transfer to sauté pan. Add butter, brown sugar, ginger, and cinnamon. Cook until coated with butter mixture; about 10 minutes.

Fall 2015 Open House

Twice each year we’re reminded how lucky we are to be the in-house caterer for The Cannery. I mean, we know we’re lucky, but when The Cannery’s Open House rolls around, there’s nothing quite like it. This bi-annual event is something we look forward to AS SOON as the previous one is over (we’re already planning Spring 2016)! The vendors were top-notch:

Red Leaf Weddings STUNNED us again (I really don’t know why we’re surprised at this point) with incredible photos of the event AND our tasty food!

A Recipe from the Chef: Gorgonzola Apricot Cheesecake

This is a relatively easy recipe. You can trick people into thinking you spent hours and hours preparing when in reality it will only take about 30 minutes of prep time. It’s perfect for

Ingredients:

  • 3 pounds Cream Cheese
  • 2 cups Crumbled Gorgonzola Cheese, softened
  • ½ cup Green Onion, chopped
  • ¼ cup Parsley, chopped
  • 6 cloves Garlic, chopped
  • 4 Whole Eggs
  • ¼ cup Half and Half
  • 3 tbsp Tony’s Seasoning
  • 1 cup Italian Bread Crumbs
  • Pomace Olive Oil
  • 1 ½ cup dry Apricots, chopped finely
  • 2 cups Walnuts, chopped finely
  • 9” Spring Pan lined with foil.

Instructions:

  1. Preheat oven to 350 degrees.
  2. Add olive oil to bread crumbs until moist.
  3. Press half of mixture into bottom of foil lined spring pan.
  4. Mix first 8 ingredients in mixer.
  5. Fill half of pan with mixture.
  6. Gently spread chopped apricots evenly over mixture.
  7. Spread remaining mixture over apricots to top of pan.
  8. Top with chopped walnuts. Loosely cover with foil.
  9. Bake in over for 1 hour.
  10. Turn off oven and let sit for 15 minutes.
  11. Remove from oven and let cool for 15 minutes.
  12. Refrigerate uncovered.
  13. Cool completely (roughly 2 hours) before cutting into wedges.
  14. Serve with water crackers.
